A vegetable oil is most often obtained by first cold pressing of a nut, fruit, or oil-bearing seed. This oil is therefore comparable to a lipid "juice".

However, there are many plants that cannot produce oil by pressing, yet whose beneficial effects on health are expressed in oils. These are called oil macerates or macerated oils.
